Artemesia Dracunculus
Tarragon

This is a small, shrubby herb that is an essential herb for classic French cuisine. It should be grown in a sunny, well-drained location in your garden for it to reach its potential height of 80-90cm. Each stem is covered with pretty, long narrow leaves that have a strong pleasing anise flavour. This herb is a small perennial shrub and will produce an abundance of stems which you can easily harvest and dry for your favourite recipes.

Culinary Uses
This is a fantastic, versatile herb which is a staple ingredient in French cuisine and makes an attractive garnish. It complements fish and shellfish and goes well with chicken, turkey, game and veal and most egg dishes. Tarragon has a particular ability to flavour vinegar, achieved by placing a complete, washed stem with leaves in a bottle of good quality, white wine vinegar for a few weeks. Tarragon vinegar then becomes a useful ingredient for salad dressings and when making homemade mustards. It is great for using with soups, cheeses, eggs, sour cream and yogurt and the chopped leaves can be used in a wide range of sauces including tartar sauce, herbed mayonnaise, melted butter sauce and French dressing. Use the leaves fresh in salads but avoid cooking it for too long as this will bring out its bitter side
