Mentha Spicata
Spearmint
This is a popular herb with reddish-green stems and light purple, lavender-like summer flowers. These arise from a carpet of lance-shaped, mid-green leaves which are slightly toothed and offer a fantastic peppermint scent. It resembles peppermint but is rather more vigorous and spreads quickly when grown under ideal conditions.Culinary UsesThe leaves combines well with many vegetables such as new potatoes, tomatoes, carrots and peas and a few chopped leaves give refreshment to green salads and salad dressings. It can be used to great effect with grilled meats, stuffed vegetables and rice or, alternatively, incorporated into yogurt dressings, dips and soups. Use a sprig of spearmint to create a wonderful, refreshing mint tea.
