Salad Burnet
This is an evergreen herb which has a circular, mounding growth habit to a height of around 30cm. The mound is formed by elongated, feather-like leaves that arch gracefully outwards from the centre of the plant. Throughout the summer it produces tiny pinkish-red flowers which are borne in compact thimble-shaped flower heads. These look most attractive in full sun and are produced in abundance if the plant is grown in a well-drained, moderately fertile soil.Culinary UsesThe attractively-shaped leaves of salad burnet have a fresh cucumber taste and are great for adding flavour to salads, fruit juices, cool drinks and light cocktails. It is also a good ingredient for herbal vinegars, oils, salad dressings and sauces, and makes a beautiful garnish on cream soups and casseroles. It is good for flavouring cream cheeses and herbal butters and should be added to recipes right at the end of the cooking period.

Garden Care:
Harvest whole leaves as needed, but wait until the plant is well established, which may be several months. Strip the leaflets off the wiry leaf stems and use in salads or sandwiches as required
