Marjoram
Also known as wild Marjoram, this is a mat-forming, woody-based perennial with oval-shaped, aromatic dark green leaves. Wiry flowers spikes of tiny, tubular, two-lipped mauve flowers are produced above the foliage throughout the summer. Established plants should be cut back by two-thirds in late summer to prevent them from becoming straggly.Culinary UsesAs a key part in Mediterranean cuisine, marjoram is a versatile herb whose leaves can be used fresh or dried and can be stored for use over winter. It is a signature poultry-stuffing herb and forms one of the key ingredients in pizza and pasta sauce. The fresh leaves can be added to salads or chopped and added to roast meat sandwiches, herb butter, egg dishes and soups. Its aromatic flavour also makes it an excellent addition to pot roast, veal and liver. When adding to cooked meals, add near the end of the cooking period
