This is an aromatic, highly decorative dwarf evergreen herb with narrow mid-green leaves and a bushy habit growth habit. It is an attractive variety which is ideal for using in robust, rustic dishes like potato and bean soup. It also goes well with meat such as lamb or chicken, where it may be an interesting alternative to sage. Between July and September it bears stunning, dark purple-blue whorls of flowers which make it a great choice as a low growing, flowering hedge.

Culinary Uses
The flowers and the leaves of the hyssop can be used to season all kinds of vegetable dishes, soups, casseroles and sauces, as well as pickles and preserve. The leaves can be used as a stuffing for meats or poultry and can be incorporated into green salads, such as fruit salad, to create a minty and refreshing flavour. The leaves can also be made into a refreshing and relaxing herbal tea, use them mixed with spearmint or lemon balm to prepare a herbal tea that has a lighter flavour. Use sparingly as it had a potent taste

  • Soil: Any reasonably well-drained, fertile soil is suitable

  • Rate of Growth: Average growing

  • Flowering Period: July to September

  • Flower Colour: Dark blue

  • Other Features: Its use as a spice is limited due to its weak aroma and bitter taste. Young leaves can also be used in salads

  • Hardiness: Fully hardy

  • Garden Care: The growing points should be pinched out in the first year. In subsequent years, just trim the plant lightly in March or April
