Fennel

Fennel is an aromatic biennial with soft, feathery, almost hair-like foliage. The lacy, finely dissected leaves have swollen leaf stems that clasp the main stalk to form an edible structure. It grows to around 60cm tall in its first growing season and produces flowering stems that stand a metre tall. These support showy, flat-topped umbels of little golden flowers the following year. It has a sweet fragrance with an elongated root resembling a carrot.

Culinary Uses
Fennel has many culinary uses. The leaves can be used in salads and stuffings, as a garnish or in sauces for fish. In Italy it is also used to flavour roast pork and sausages. The stems can be cooked as a vegetable and the seeds can be used to add flavour as they possess a slight liqourice taste. Also used in baking and in patisserie, fennel is used to flavour breads, cakes and confectionery.

  • Flower Colour: Golden-yellow

  • Other Features: Tender leaves can be used for fish dishes and sauces

  • Hardiness: Fully hardy

  • Garden Care: The plant's tendency to self-seed may be a problem in hot summers. If fennel is being grown exclusively for its foliage remove the yellow flower heads to prevent it from self-seeding
